Saffron in bloom

This is the saffron flower in full bloom. The flower blooms from mid-October to mid-November and it is in this period that early in the morning you have to go to the field to collect the flowers before they open completely.

The real treasure is enclosed within the flower: it is the bright red Pistils which must be delicately separated from the rest of the flower and then dried.
